Overview
Looking at the shiny purple eggplants in the vegetable field, I couldn't help but pick them off and make this cold eggplant dish, which is super delicious with rice.

Peel eggplant

Wash and cut into pieces

Place in a steamer and steam for 20 minutes

Take out, let cool, and tear into strips. Chop the coriander, garlic, and millet pepper, sprinkle them on the torn eggplant, and then add the sauce prepared with salt, sugar, vinegar, light soy sauce, and chili oil.
