Cut the bitter melon in half and scoop out the white flesh with a spoon.
-
Cut into 0.3 cm thick slices. When the water changes color, put it in a basin of cold water and let it cool down. Adding some cooking oil and salt before boiling the water can make the color of the vegetables better-looking and reduce the loss of nutrients in the vegetables. Blanch the fungus that has been soaked in advance.
-
Appropriate amount of onion, ginger, garlic, millet and pepper. Slice pork, fat or lean is best. Blanch the fungus in appropriate amount.
-
Put a little oil in the wok and add the shredded ginger first.
-
Then add the meat slices.
-
When the meat changes color, add 1 tsp of cooking wine, appropriate amount of dark soy sauce, stir-fry a few times and remove from the pot.
-
Wash the wok, heat the pan with cold oil, add onion, ginger, garlic and red pepper and sauté until fragrant.
-
Add bitter melon and fungus and stir-fry for a few times.
-
Add the meat slices and stir-fry, adding a little five-spice powder.
-
Add appropriate amount of salt. If the dish feels a little dry, add a small spoonful of warm water.
-
Remove from the pan.
