Around the Qingming Festival when the wormwood is at its tenderest, picking the stems and leaves of the wormwood and frying it into small cakes is a rare spring delicacy.

Remove roots and yellow leaves from freshly picked wormwood

Soak for a while, then rinse and drain

Cut into small pieces

Place in a large bowl and add eggs, salt and allspice
