Blanch the Qianzhang knot in boiling water and blanch the ribs and set aside.

Pour oil into the pot, add ginger slices, garlic slices, star anise and scallions and stir-fry until fragrant

Add the ribs, add dark soy sauce, cooking wine, and vinegar, stir-fry until they stick to the pan, pour boiling water to cover the ribs, bring the water to a boil, then reduce the heat and simmer for about 40 minutes.
