Wash the chicken feet and cut them in the middle

Cut ginger into thick shreds, cut green onion into sections, cut dry chili into sections, garlic cloves, and star anise

Heat oil in a hot pan, add chicken feet and fry to dry out the water

Add ginger, garlic, scallions, dry and spicy star anise

Stir fry until fragrant

Add 1 tbsp cooking wine, 1 tbsp dark soy sauce, 1 tbsp oil, 2 tbsp light soy sauce and stir-fry until browned

Add water to cover the chicken feet, bring to a boil over high heat and then reduce to medium to low heat until cooked

Add appropriate amount of salt, 2 tablespoons of sugar and reduce the juice over high heat
