Bloom and wash the quick-frozen squid rolls bought from the supermarket.

Cut the squid into strips and quickly blanch it in a pot of boiling water for about half a minute and take it out.

Cut green onions and ginger into thin strips.

Blend the cooking wine, light soy sauce, rice vinegar, sugar, and salt into a bowl of sauce so that you can stir-fry quickly when frying the squid.

Heat oil in a pan, sauté dry red peppers until the peppers change color slightly and take them out. When the oil is 40% hot, pour in the blanched shredded squid and the blended bowl juice. Stir fry a few times quickly and then add the chopped leek segments. Remove from the pan and garnish with red peppers.
