Prepare fresh shrimps and wash them with water

Prepare dried chili peppers and Sichuan peppercorns

Heat oil in a pot until it is 60% hot. Pour in the shrimp and fry for about two minutes. Remove and control the oil

When the fire reaches 70-80% hot, pour in the shrimp and fry again quickly. They will be crispy in about 1 minute

After re-frying, remove and set aside

Leave some oil in the pot (a little more) and fry the prepared dried chili peppers and Sichuan peppercorns over low heat until fragrant (about half a minute, it will become spicier as time goes by)

Fried, take out and set aside

Prepare green onion and ginger rice

Prepare bread crumbs

Heat oil in a pot and sauté scallions, ginger and rice over low heat

Pour in the fried dried chili peppers and Sichuan peppercorns

Pour in the fried shrimp
-
Add salt, sugar, chicken powder, bread crumbs, chopped green onion and a handful of cooked white sesame seeds, stir-fry for a few times over low heat and serve
