"Iron plate" flavored eggplant box
Overview
Eggplants cannot be delicious without oil - this is the opinion of ordinary cooks, but of course I cannot be so vulgar. This eggplant box does not require frying or iron plate, but it has the flavor of iron plate. The full name should be teppanyaki flavored eggplant with tomato sauce.

Ingredients
Steps
-
Wash the eggplant and remove the stems
-
Cut diagonally into discs nearly 1 cm thick
-
Each piece is then opened from one side without cutting, that is, the eggplant clip
-
Add salt, onion, ginger, five-spice powder, dark soy sauce, and cooking wine to the meat filling and mix well
-
Take an eggplant clip and stuff it with meat filling
-
Compaction
-
The filling should not be too full, just enough to cover it
-
Add a little oil to a flat-bottomed non-stick pan, or an electric pan, set it to low heat and you’re ready to fry
-
Dissolve a small spoonful of starch in water and dip the eggplant clips in
-
Spread all over the bottom of the pot and turn over when the eggplant becomes soft
-
Just fry it until there are char marks on both sides.
-
How about it? It has the effect of an iron plate, right?
-
The next step is to pour the sauce. Use salt, tomato paste, sugar and appropriate amount of water to make a sauce
-
Chop green onions and ginger
-
Put a little oil in the pot, sauté the onion and ginger, pour in the sauce, bring to the pot and cook for a while
-
Top with eggplant
-
Finally sprinkle with coriander

Sweet and sour taste, with a bit of "iron plate" burnt aroma, haha. Family reunion on National Day, suitable for all ages.
