This braised duck recipe is adapted from the recipe of Rongchang braised goose (the finished product picture has an introduction to Rongchang braised goose, which can also be found on Baidu). In markets or supermarkets, unprocessed duck meat is more common than goose meat, so choose duck meat. The marinade I chose this time is the closest to the taste of Rongchang’s authentic braised goose that I have tasted. This marinade is sold on Taobao and grain stores and is easy to use. If you use the marinade from the vegetable market, which is not powdery, you need to stir-fry the marinade in a pot for a while to make it more fragrant. Duck meat nourishes yin and moisturizes the lungs, and is often called the best nourishing food in the golden autumn among meats. Duck meat is cool in nature and has the functions of nourishing yin and nourishing the lungs, relieving cough and reducing phlegm. The protein content is also higher than that of pork and mutton. Duck meat has a low fat content, and the unsaturated fat is easily digested by the human body, which can lower cholesterol and protect the heart.
