Set aside the cooked scallion oil.

Cut the sausage into fine dices and stir-fry until fragrant.

Sift the flour, gradually add the scallion oil and mix into the coarse powder.

Continue to add the egg liquid and chopped green onion gradually to form a dough.

Squeeze into a ball, do not rub too much. Keep it tightly sealed and place in the refrigerator to rest for half an hour.

Take out the dough and roll it out to about 1.5cm thickness.
