Prepare the ingredients and soak the scallops one day in advance.

Cut rapeseed into sections.

Carrot slices are carved with a grinder.

Chop green onion, shredded ginger and chili pepper.

Blanch the carrot flowers and set aside. Add a little cooking wine to the water and cook the soaked scallops for two to three minutes. Remove and set aside.

Heat oil in a pan, add onion, ginger and chili until fragrant, add scallops and stir-fry for a few times, add carrot flowers and stir-fry evenly.

Then add the rapeseed and stir-fry, add salt and oyster sauce to taste, stir-fry evenly, add a little chicken essence, drizzle with sesame oil and serve.
