Wash and drain the crab leg bones, and tear the thicker ones into pieces to make them easier to taste.

Dice the carrots, break off the corn, and wash the edamame. Put all three in the pot and cook for about 3-4 minutes

Beat the eggs and separate the yolks from the whites

Fry them separately and set aside. Note that the oil temperature is slightly lower when frying the egg whites; the whole thing can be fried a little tender

Put the oil pan over high heat, fry the crab leg mushrooms, add salt and crushed white pepper (to remove the fishy smell)

Stir-fry until the crab leg mushrooms are juicy, which is about two minutes. Add the cooked green beans, diced carrots, and corn, and continue to stir-fry

Test the saltiness, add a little more salt, wait until the water vapor in the crab leg mushrooms is dry, then pour in the fried eggs, stir evenly and serve
