Prune Oatmeal Cookies
Overview
Prunes are used sporadically, and can be added to almost any dessert or snack that can accommodate them. As a result, after making this prune oatmeal cookie, there are about 10 left, waiting to make something next time, and use them all at once!

Pour peanut oil into the basin.

Pour in the whole egg liquid and add the white sugar.

Sift in the flour, baking powder and baking soda and mix slightly to form a dough.

Add prunes, washed oatmeal and coconut flour. (Soak the prunes overnight in advance and remove the seeds.)

Knead into a dough and refrigerate for about 30 minutes.

Divide the dough into small balls of about 10g.

Use your thumb to press in the middle.

I thought the surface was too empty, so I pressed a raisin. Or you can replace it with prunes with seeds removed.

Preheat the oven to 180 degrees for 20 minutes.

After baking, you can simmer it for a few minutes.

Take it out and let it cool completely~
