Chicken and mushroom stewed vermicelli
Overview
This is a home-cooked Northeastern dish made of chicken, mushrooms and vermicelli stewed together. The hazelnut mushrooms can bring out the flavor of the chicken, and the vermicelli is smooth and delicious~

Prepare the ingredients

Soak the dried hazelnut mushrooms in water until soft, wash and set aside (soak the vermicelli and set aside)

First boil some hot water and blanch the chicken

After blanching, remove and rinse with warm water and set aside

Put oil in a pot, when the oil is hot, add a little rock sugar and heat over low heat until it melts

After the rock sugar turns red, add the chicken and stir-fry

Add a little cooking wine

A little light soy sauce

Stir-fry for a while, add hot water (the water should cover the chicken) and bring to a boil over high heat. Add the hazelnut mushrooms

Add chopped green onion and ginger slices

Then add star anise

After boiling, cover the pot and simmer over medium-low heat for about 40 minutes

Finally, put the soaked vermicelli into the pot and simmer for 10 minutes
