Chop pork, onions, ginger, and carrots into fine pieces.

Add cooking wine, starch, pepper, chicken essence and salt to the minced meat, use chopsticks to stir in one direction, add green onions, ginger, and minced carrots, pour in sesame oil and stir evenly.

Beat the eggs evenly, add flour, and mix well to form an egg paste (you can also omit the flour and directly use the egg liquid to fry the egg skin).
