Put the fish fillet in the pan and fry over low heat for about 2 minutes. Then turn to high heat and fry for about 30 seconds to let the surface become charred, but not too heavy, so as to maintain the original flavor of the ingredients. After one side is cooked, turn it over and fry on low heat for about 2 minutes, then on high heat for 20-30 seconds. It’s good to see the backbone of the fish shrinking slightly.
