Ingredients: winter melon, pork ribs, purple onion.

Peel the winter melon and cut into pieces. Finely chop the purple onion.

Turn on the heat, put an appropriate amount of water in the pot, put the ribs in the pot under cold water and boil them, squeeze out the blood foam and dirt, and remove them.

Rinse well with warm water.

Put a little oil in the pot. Add the pork ribs and stir-fry.

When both sides of the ribs turn golden brown, add dark soy sauce, stir-fry, add cooking wine (4 grams) and continue to stir-fry.

Add chopped purple onion and stir-fry until fragrant.

Add cinnamon, star anise, bay leaves, peppercorns, and dried ginger slices and stir-fry.

When the seasoning flavor is stir-fried, add boiling water to cover the ribs by 3 cm, add light soy sauce, vinegar, and cooking wine (3 grams), bring to a boil over high heat, and then simmer over low heat.

When the ribs are tender, add the winter melon cubes and simmer over high heat. When the winter melon is almost ripe, add salt and sugar to taste, simmer for another minute and turn off the heat.
