Pick off the roots of green amaranth, remove the thick stems, and wash them.

Wash and drain the two louvers.

Add an appropriate amount of water to the pot, bring to a boil over high heat, and blanch the green amaranth.

Drain the water and place in a bowl.

Lay the entire louver out flat on a cutting board.

Arrange drained amaranth around the edges of the louver.

Roll up from the edge and cut diagonally into equal segments.

Arrange on the plate one by one, leaving the middle empty.

Prepare a small plate, add 2 tablespoons of June fresh soy sauce, one tablespoon of sesame oil, minced green onion, appropriate amount of white sugar, and red pepper and mix well.
