Colorful Matcha Fruit Cake Roll

Separate the egg whites and yolks and put them into clean containers that are oil-free and water-free! Sift the flour in advance. Add 70g of hot water to the matcha powder and stir until there are no particles. First stir the milk, white sugar and vegetable oil with a manual egg beater until they are not separated.

Sift in low-gluten flour and stir into a fine paste.

Add egg yolk again and continue to mix evenly.

After making the egg yolk paste, beat the egg whites, pour in a few drops of lemon juice, beat until fish-eye frothy, add 1/3 of the white sugar. Double the volume and then add 1/3 of the white sugar.

Slightly form the meringue and pour in the last 1/3 of the sugar. Continue to beat until wet peaks form.

Pour the matcha solution into the egg yolk batter and stir evenly.

Add 1/3 of the egg white batter into the mixed matcha egg yolk batter, and mix evenly with a spatula.

After mixing evenly, pour all the matcha egg yolk paste into the protein paste. Continue to mix evenly.

Finally pour it into a golden baking pan lined with baking paper! Smooth it out with a spatula and shake it a few times.

Place in a preheated oven at 170 degrees Celsius and bake for 20 to 25 minutes.

When baking, whip the filling cream until it is 7 points apart.

Immediately after taking it out of the oven, invert it onto another piece of baking paper, tear off the baking paper at the bottom. Then invert it onto the baking paper again. Wait until it is warm, then spread the cream, add the strawberries, and roll it up with a rolling pin! Apply a thin layer of cream on the surface. (Because I whipped more whipped cream)
