Wash the raw shrimps, remove the shells and heads and tails, leaving only the shrimp meat. Chop the shrimp meat into minced shrimp.

Put the minced shrimp into a large bowl, add the prepared oil, vegetable oil, white pepper, sesame oil, salt, sugar, chopped ginger and bamboo shoots, stir evenly.

Combine wheat starch and cornstarch in a bowl. Slowly add boiling water and stir quickly. Then add lard (or oil) and continue stirring.

Knead the mixed dough into a smooth dough ball, then roll the dough ball into a long strip and cut it into 18 equal parts with a kitchen knife. Roll each portion into a dumpling wrapper.
