Eggplant and Shrimp
Overview
There were some leftover vegetables from the vegetables I bought: 2 eggplants, 1 king oyster mushroom, and a small amount of snow peas. The variety was relatively small, so I fried them together and added some shrimp!

Wash the eggplant and cut into small pieces

Remove the stems, tendons and cut the snow peas into small pieces. Wash the king oyster mushrooms and cut them into small pieces

Marinate the shrimps with cooking wine, salt and chicken powder for a while

Heat a large oil pan, fry the eggplant until soft, remove and drain the oil

In the same way, fry the king oyster mushrooms until the edges are a little yellow and take them out

Oil the shrimp until they change color, take them out and drain the oil

Leave a little oil in the pot and sauté ginger and garlic until fragrant

Add snow peas and stir-fry

Add some salt and sugar to taste

Add the shrimp and stir-fry evenly

Finally, pour in the umami sauce and stir-fry well before serving
