Soak the chicken legs in water for 30 minutes to bleed. Change the water several times during this period. Wash and make a few cuts on the chicken legs. Add cooking wine, black pepper, dark soy sauce, light soy sauce, ginger slices, garlic and a little salt to a large container and marinate for more than an hour

Wash the small potatoes, put water in a pot, add a little salt, add the potatoes and cook until the potatoes become soft

Wrap a baking sheet with foil, pour a little oil on it, wash the onions and carrots, cut them into cubes, put them on the grill

Arrange the marinated chicken legs and cooked baby potatoes on the onions and carrot slices

After the oven is preheated, bake it on the middle rack at 180 degrees for 10 minutes. Then take it out and brush it with a layer of marinated chicken leg sauce, and then brush it with a layer of oil. Repeat this process several times more to add more flavor to the chicken leg until the chicken leg is cooked
