Ingredients: Laodoufu

Brine ingredients: 1. Star anise, Sichuan peppercorns, dried chili peppers, grass fruits, cinnamon, cloves, bay leaves, tangerine peel, hawthorn, angelica angelica, rock sugar

Cut the tofu into thin and even square slices

Cover a cutting board with parchment paper and place the tofu on it

Get a container that can hold a cutting board, and place a steaming rack or a bowl upside down in the middle (the tofu will release water, and the container is used to catch the water)

Place the tofu plate on the steaming rack (bowl)

Sprinkle a little salt on the surface of the tofu

Press a flat plate (the baking pan I used) that can cover all the tofu slices

Place a heavy object on top. Don’t be too heavy at first. After about 2 hours, add double the weight. Press for a total of about 5 hours or more. The longer you press, the more water will come out of the tofu and the tougher its texture will be

Place the pressed tofu into the baking mesh, brush a layer of oil on the surface, bake in the oven at 180 degrees, middle level, for about 20 minutes, turn over, brush with oil, and bake for another 20 minutes

The grilled tofu has a golden crispy skin on the surface

Put all the brine ingredients except ginger, green onion and seasoning into a gauze bag

Pour all the sauce into the pot, add an appropriate amount of water, and put in the marinade packet

Add ginger slices and green onions

Finally, add the roasted tofu, bring to a boil over high heat, then turn to low heat and simmer until the flavor is absorbed, turn off the heat and soak until the soup cools down

Brush the surface of the marinated tofu with oil, bake at 180 degrees for 20 minutes on each side

Take it out and let it cool

It’s great for stir-fry, salad, or as a snack. The skin is chewy and the inside is juicy and tasty.
