Stir-fried pork slices with mushrooms
Overview
During my vacation, I invited friends to my home for hot pot. After they left, the place was in a mess, and there were many vegetables left, including mushrooms. I lazily rewatched "Transformers" in bed in the morning. After getting up at noon, I fried mushroom meat slices. It was very fresh and fragrant, and the meat slices were also very tender. There are relatively many seasonings used, such as very fresh soy sauce, vinegar, chicken essence, and sugar. A little bit of these seasonings are used to enhance the flavor. In fact, the mushrooms themselves are already very fragrant, so they can be used without these seasonings.

Cut the tenderloin into thin slices, add a tablespoon of cooking wine, half a tablespoon of very fresh soy sauce, appropriate amount of starch, white pepper, and salt, mix well and season.

Cut the onions, ginger, and garlic into thin slices. Wash and slice the mushrooms.

Heat the pan with cold oil. When the oil is hot, add the meat slices and quickly break them up until the meat slices change color. Set aside.

Heat the oil in the pot. When the oil is hot, add the onions, ginger and garlic and sauté them.

Add the mushroom slices and stir-fry until the mushrooms are soft and tender. Add the meat slices, add cooking wine and an appropriate amount of sugar, pour a few drops of vinegar along the edge of the pot and mix well.

Add salt, turn off the heat, add chicken essence and bring to the pot.
