Soak the pig skin in water for 2 hours, put it in a pot and cook for 30 minutes, and pluck out the hair on the pig skin. Use a knife to scrape off the fat inside the meat skin. The cleaner the fat is scraped off, the clearer the soup will be. Let cool and then cut into strips. (I used processed pig skin, so these steps are omitted)

Spices: star anise, cloves, kaempferol, galangal, bay leaves, cinnamon, etc. Wrap with gauze.

Put shredded pork skin into the pot, add water (just enough to cover the pig skin), add aniseed packets, rice wine, ginger slices, and green onions. Bring to a boil, turn to low heat and simmer for about 2 hours.

After cooking, remove the ginger slices, green onion segments and aniseed packets. Pour the soup and pork rind shreds into the container.

After cooling naturally, move to the refrigerator or a low temperature place.

After solidification, remove the slices. 1/4 tsp of sesame oil, 1/4 tsp of pepper oil, 1/4 tsp of balsamic vinegar, 2 tbsp of boiled soy sauce (soy sauce boiled with aniseed and soy sauce), 3 tbsp of chili pepper, and make a sauce. Pour on the sauce and sprinkle with shredded garlic sprouts.
