Stewed eggplant with clams
Overview
Stewed eggplant with clams is a dish I have eaten in restaurants before. I tried making it myself today. It tastes good. My husband and son both like it! Haha, eat them all.

After buying clams, soak them in water and wash them several times.

Wash and cut the eggplant into hob pieces, marinate with a little salt for about 5 minutes, rinse once the eggplant becomes soft, drain and set aside.

Heat oil in a pot, add onion, ginger and garlic and sauté

Pour in the eggplant, add five-spice powder, and soy sauce and stir-fry over high heat.

After stir-frying until soft, place the clams on the eggplant, add an appropriate amount of water, cover the lid and simmer over medium heat until all the clams are opened.

Then collect the juice, add salt, stir-fry evenly, sprinkle with coriander and take it out of the pot. (There is no coriander at home, I put chopped green onion)
