Stewed Vermicelli with Minced Pork and Tofu Skin

Prepare the bean curd and vermicelli soaked in warm water until soft. Wash the hind leg meat and cut into minced meat.

Cut the tofu skin into strips.

Tie the cut tofu skin into a bow tie.

Cut the ginger and garlic into minced garlic, cut the green onion into small pieces, and cut the green and red pepper into small pieces.

Boil water in a pot. When the water boils, add a little salt and blanch the tofu skin for one minute.

Remove from cold water and drain. Set aside.

Take a small bowl, add a little starch into it and mix it into water starch.

Heat oil in a pot and fry minced meat until it changes colour.

Fry onion, ginger, garlic, pepper and a spoonful of bean paste into red oil.

Add two bowls of water to the pot and bring to a boil.

Add the bean curd and vermicelli and cook for 5 minutes.

Put the green and red peppers in and turn off the heat.

Plate and sprinkle with chopped green onion.
