Make the pie crust first, soften the butter in advance, add 40 grams of fine sugar to the softened butter and beat with an electric mixer until combined

Add 25 grams of whole egg liquid and beat until the oil and water are mixed

Sift in 90 grams of low-gluten flour and mix well with a spatula, turn it over from the bottom up and press down

Stir well and knead it into a ball with your hands, wrap it in plastic wrap and put it in the refrigerator for 1 hour

Take out the refrigerated dough and roll it into a round piece with a rolling pin. You can control the thickness of the dough according to the size of your pie plate. However, if it is too thick, it will affect the taste (you can cover it with plastic wrap when rolling)

Put the rolled out dough into the pie plate, press it evenly on all sides with your hands, remove the excess dough at the edge of the plate, and the pie crust is ready

Add the remaining 20 grams of caster sugar to the milk and simmer over low heat until the sugar dissolves. Turn off the heat and let cool for later use

Add the cream, egg yolk, and 25 grams of whole egg liquid and mix well with a whisk. Then pour in the freshly cooked milk syrup and continue mixing

Sift in the remaining 15 grams of low-gluten flour and mix well

Add almond flour and mix well

Cut the apple into pieces, and cut each piece into continuous slices. Choose the size of the apple according to your needs

Place the cut apple pieces into the pie plate, then pour the prepared batter into it, and bake in the middle rack of the oven at 180 degrees for 25 minutes
