Take an appropriate amount of pasta and soak it in room temperature water for a while in advance, so that the pasta is easier to cook (here we use fusilli pasta, other shapes of pasta are acceptable)

Chop the garlic, onion and carrot into small pieces (you can add some chopped green pepper) and set aside

Add a small amount of salt and light soy sauce to the minced meat and marinate for a while (beef, mutton or other minced meat is acceptable)

Cut the tomatoes into small pieces and set aside separately, trying to retain all the juice (it is recommended to use relatively ripe and juicy tomatoes; if you like the tomato flavor, you can add more chopped tomatoes)

Put a small amount of oil in the pot, first add the chopped garlic and onion, and stir-fry until the garlic and onion begin to smell

Add grated carrots and stir-fry until carrots are soft

Add the minced meat and continue to stir-fry until the minced meat is almost cooked

Add chopped tomatoes and some salt to speed up tomato softening and juice production

Add an appropriate amount of tomato sauce, add water and cook until it boils. Add some salt according to taste and turn off the heat. The meat sauce is ready (you can make a little more sauce because the noodles will absorb the sauce)
