Select fresh and plump oysters, rinse them with running water and drain them (remember to squeeze them dry with your hands)

Use a diagonal knife to cut into small pieces

Slice the ginger, cut the green onion into sections, peel and cut the garlic into small pieces, and remove the leaves from the nine-layer pagoda

Blend corn starch with appropriate amount of water

Prepare the required ingredients

Heat oil in a pan, add onion, ginger and garlic and sauté until fragrant

Add pickles and stir-fry

Add the oysters and stir-fry quickly over high heat (the stir-frying technique can prevent the oysters from being smashed by the spatula)

Add light soy sauce and stir-fry quickly to coat evenly

Add cornstarch water to thicken

Sprinkle the nine-layer pagoda leaves before serving and stir evenly

Take out of the pan, plate and serve.
