Slice ginger, cut green onion into sections, dice garlic and mix well with soy sauce, vinegar and white wine

Remove the head and wash the Spanish mackerel

Peel and cut potatoes into cubes

Soak the vermicelli in water until soft

Heat the oil and sugar and stir-fry the mackerel for about two minutes. Add seasonings and potatoes and stir-fry for three to four minutes

Add water, bring to a boil, simmer for five to six minutes, add vermicelli

Stew until cooked and ready to serve
