Lotus Root Braised Pork Ribs
Overview
I didn't like meat when I was a kid, but I was fond of pork ribs. At that time, there weren't many ways to do it. I just chopped the ribs and lotus root into pieces and poured them into a big pot. Add some star anise, pepper, green onion and ginger, and simmer over high heat until the meat is rotten and the soup is thick. Just sprinkle in some salt. When the soup in the pot starts to boil, a fragrant aroma of meat will permeate the whole house, which can be smelled from a distance. I will stay by the pot, holding a bowl and sitting on a small stool, waiting eagerly. I am often laughed at by my parents as a greedy cat. Although these beautiful childhood days are gone forever, how can I forget them?
