Spicy black bean fish
Overview
Two days ago, I bought tempeh from the vegetable market, which is said to be a specialty of Deyang. This tempeh is also delicious when used to stir-fry twice-cooked pork.

Marinate the crucian carp with onions, ginger, a little salt and cooking wine for 20 minutes.

Black soybeans. You can also buy Lao Gan Ma’s instead.

Wash the marinated fish. Cut flower knives on both sides. Add some more starch.

Put oil in the pot. Heat it up and fry the fish.

Fry until golden brown on both sides and remove.

Leave some oil in the pan. Add ginger slices and saute until fragrant.

Add a small spoonful of bean paste, stir-fry and add Chaotian pepper and scallions.
