Beef Patty
Overview
It was still a long time ago. On the way to send children to school, they would pass by an alley. As soon as they entered the alley, they could smell the aroma of beef patties from a distance. There is a breakfast stall there, and the beef patties made every day are in short supply, so you always have to queue for a while to buy one. However, this stall later moved to an unknown location due to urban reconstruction, and I haven’t eaten there for 20 years. I really miss that taste! While waiting there, I would consciously or unconsciously observe the process of the boss's work. The steps may be imprinted in my mind and I have not forgotten them after all these years. Today I saw that there was a piece of beef in the refrigerator, so I wanted to eat this beef patty. I made it from memory. The stall owner used an oven and we use an oven for the same reason. It's just not as good as others. If you don't have special tools, you can't make it exactly the same. Fortunately, the taste is not bad, so I'm quite satisfied.

Fry the peppercorns in a pot, let cool and roll into noodles

Chop green onion and ginger into pieces

Put the meat filling in a container and add appropriate amount of umami soy sauce, Sichuan pepper powder, and pepper

Beat vigorously in one direction until it becomes sticky

Add chopped green onion, ginger and vegetable oil and mix well

Set aside the prepared meat filling to taste

Put the all-purpose flour in a basin and mix it with warm water around 40 degrees until it becomes flocculent

Form a smooth dough, cover with plastic wrap or a damp cloth and set aside for 20 minutes

Knead the dough again and divide it into 5 doughs of the same size, cover with plastic wrap for 20 minutes

Take a piece of dough and roll it out into a thin shape

Place a portion of beef filling on one end of the noodles

Roll it up and wrap it as shown in the picture

Stretch the noodles while curling them

Roll out the rolled dough, not too thin to 1cm-1.5cm thickness

Pour oil into a pan and sear the rolled beef patties over low heat until the skin forms on both sides
