Prepare all materials

Cut the snapper into strips and mince the onion and ginger

Put the cut sea bream, cooking wine, light soy sauce, egg white, salt, green onion and ginger together, mix well and marinate for a while

While marinating the snapper, mix appropriate amounts of tomato sauce, sugar, light soy sauce, and vinegar with a little water to make a soup

Coat the marinated snapper with starch (be sure to shake off the excess starch, otherwise it will be troublesome when frying)

Add vegetable oil to the wok, heat it, then slowly fry the snapper over low heat until golden brown, remove and set aside

Leave oil at the bottom of the pot. After heating, put the sauce into low heat and simmer for a while. Add water starch to thicken the sauce. Pour in the fried snapper strips one by one and stir-fry until the sauce is fully coated on the snapper strips. Then turn off the heat and take out the pan (this process needs to be completed quickly. I didn’t have an assistant at home, so I didn’t take the photo)
