【Shaanxi】Laoyulin braised shredded pork with spinach
Overview
This dish has always been recommended by friends in northern Shaanxi. It is a very homely and unique dish. I ate this dish when I went to Yulin last year. The potatoes are mashed into a puree but don't mash it too much. It has a grainy texture and is more delicious.

Prepare materials.

Cut potatoes into thick slices and set aside.

Add water to a steamer to steam the potato slices.

Cut spinach into quarters.

Mash the steamed potatoes.

Add oil to the wok, sauté minced chives over low heat, and stir-fry shredded pork belly.

Stir-fried pork belly.

Add stock and mashed potatoes and bring to a boil.

Add spinach, salt, five-spice powder, ginger powder, pepper, sugar and vinegar to taste, stir-fry evenly.
