Cut the yellow croaker bones into cubes, cut the yellow croaker meat into cubes, and cut the asparagus and shrimp into cubes.

Make soup, pour a little oil into the pot, fry the fish bones, and add a little grated ginger during the frying process. After frying until brown, pour a little water, boil for a while, and then filter out the "fish soup".

Marinate: Pour diced yellow croaker and shrimp into a crystal bowl, marinate with rice wine, salt, sesame oil, and ginger paste (ginger paste can remove the fishy smell), mix well and add a little egg white and starch (starch can make the fish slippery). Also add a little salad oil so the fish doesn't stick together during subsequent cooking.

To make crab roe, pour a little water into the pot, thicken a small bowl of starch and pour it into the pot. Add the yolks of three eggs into the pot, stir well and set aside. (We used egg yolks and egg whites respectively in this dish. For details on how to separate egg yolks and egg whites, please refer to the tips at the bottom of this article❶)

Heat the oil and put the marinated yellow croaker and shrimp meat into the hot oil and roll them.

Filter: Strain the oiled ingredients through a strainer.

After frying the cod, remove the bones from the cod and fry it in a pan. Sprinkle some salt on the fish during the frying process.

Make "Crab Race" (1) Pour the previously cooked fish soup into the pot, add diced asparagus, and pour a small bowl of thickened starch into the pot. Then pour in the yellow croaker meat and shrimp meat filtered in step 6. Remember to add some salt.

Make "Crab Race" (2) Turn off the heat, pour the prepared "crab roe" into the pot of the above steps, top with a little egg white, mix well, then add a little salt and ginger paste. (The thing made at this time is actually a crab race)

Put the fried cod on a plate, top with the prepared "crab", and finally pour a little balsamic vinegar. The improved version of crab racing is done!
