The weather is getting nicer and I’m starting to miss the freshness of lemon pickles. This is a super refreshing quick dish that only takes a few steps. The crisp texture of the cabbage and the fragrance of lemon will refresh more than just your mood.

Cut the cabbage into diamond-shaped sections and sprinkle with salt to drain out the moisture.

Cut the red pepper into small pieces, put a little water in the pot and bring to a boil. Pour sugar, white vinegar and salt into the pepper water and mix. Add green and yellow lemon slices.

Pour the cabbage segments into the water mixed in step 3 and soak for 12 hours
