Prepare some raw materials

Clean the scallop meat and use a small toothbrush to clean the scallops

Marinate the scallop meat with one spoonful of rice wine and half a spoonful of salt for a while (I personally don’t like the taste of cooking wine, so I will replace the cooking wine with rice wine. If you like it, just use cooking wine)

Blanch the vermicelli in boiling water for 1 minute

Take it out and put it in cold water immediately. The processed vermicelli will taste better

Add a little minced ginger to the vermicelli, a spoonful of steamed fish soy sauce, and half a spoonful of salt

Place the vermicelli inside the scallops, place the scallop meat on top of the vermicelli, and steam for 8 minutes.

Chop a head of garlic and chop 5 scallions into very small pieces

When the oil at the bottom of the pan is 80% hot, turn off the heat, then mince the chives and garlic everywhere, let the residual heat of the oil cook out the garlic aroma, add a little salt and a spoonful of red chopped pepper, and then pour it on the steamed scallops. If you don’t like chopped pepper, you can leave it out.
