Homemade chicken floss
Overview
Thoughts: Chicken breast is rich in nutrients and has relatively low fat content. When making chicken floss, try to choose chicken breast without fascia and fry it with a bread machine, which can save a lot of trouble. Many functions of my bread machine have not been developed and used. It is only used for kneading dough and making bread a few times. Today I suddenly wanted to make meat floss cake rolls. I don’t have meat floss at home, so I tried to make it myself! In the past, I only knew how to buy it in the supermarket, but I didn’t expect that I could make meat floss myself. I actually made it quite successfully, which gave me a small sense of accomplishment. Of course, if you don’t have a bread machine, you can also use a food processor to break it and fry it in a wok.

Wash the chicken breasts and set aside.

The chicken breast you selected has almost no fascia, so just cut it into pieces along the grain of the chicken.

Prepare onions, ginger, garlic, bay leaves, star anise, peppercorns, white sesame seeds, peppercorns, and salt and pepper.

Boil the water in the pot, add the chicken and blanch it.

Take it out and wash away the foam.

Pour into the pressure cooker pot, add onions, ginger, garlic, peppercorns, star anise, bay leaves, and pour in cooking wine.

Close the lid and activate the switch, select "Chicken and Duck" as the ingredient mode, and press Start to enter the "Soup Making" mode.

Start preparing the sauce: add 1 spoon of sugar, 1 spoon of light soy sauce, a little dark soy sauce, and appropriate amount of sesame oil in a bowl and stir evenly.

Cook the chicken, remove and drain.

Put it into a plastic bag and beat it with a rolling pin a few times,

Put it on a plate, shake it off a few times with your hands and it will become very loose without tearing it again.

Then add the bread machine liner.

Add white sesame seeds. (I used fried white sesame seeds)

Then add the prepared sauce.

Close the lid and activate the switch to select the "Jam" function. Press the start key. The jam function of my bread machine lasts 1:05. (The time can be extended or reduced depending on the amount)

Add appropriate amount of pepper powder, salt and pepper in the last 20 minutes. (can be omitted)

When the time is up, take out and place on a baking sheet lined with greaseproof paper and let cool.

Place in an airtight box and refrigerate.
