Braised duck feet
Overview
Duck feet and duck paws are rich in collagen and have the same nutrition as bear paws of the same quality. The palm is the basic organ for movement. It has many tendons, thick skin and no flesh. If it has more tendons, it will be chewy, if its skin is thicker, it will contain soup, and if it has less meat, it will be more flavorful. From a nutritional point of view, duck feet contain more protein, low sugar, and little fat, so duck feet can be called an excellent weight loss food.

Steps
-
Wash the duck feet, cut off the nails, put them in the pot and boil them again. After boiling for 1 minute, pour out the water and wash them again.
-
Prepare the marinade, Sichuan peppercorns, star anise, cinnamon, ginger, light and dark soy sauce, and cooking wine.
-
Put water in the pot, slice the ginger, pour in all the marinade and duck feet, boil over high heat, boil for 2 minutes and then reduce the heat to medium-low.
-
When there is no more water in the marinade, turn down the heat and turn your paws back and forth to achieve a uniform color.
-
Finally, the marinade can be clamped when it reaches this level, so that the marinade will not be wasted and the saltiness and color will be just right.
-
When finished, plate and start eating.
