Prepare the ingredients, soak the fungus, only use a few. I have so many and still have half of them for cooking. Chop onion, ginger and garlic and set aside.
-
First wash the chicken feet, cut off the nails and cut them in half.
-
.Put water and chicken feet into the pot and boil. After the water boils, skim off the foam and cook for about 5 minutes. Chicken feet are easy to cook. Don’t cook them for too long. If you cook them too short, they will be too tough and hard to taste
-
Take out the cooked chicken feet and put them in ice water to chill them. This will make the chicken feet chewier.
-
Cut the soaked fungus in half, put it in water and cook over medium heat for about 8 minutes.
-
Pat the cucumber and cut into pieces.
-
Put the chicken feet, cucumbers, and fungus all into a large bowl.
-
Add chopped green onion, garlic, chili, a little soy sauce, sugar, fish sauce, squeeze in the juice of half a lemon, a little salt and chicken essence, mix well

I also tried this dish in a restaurant and fell in love with it as soon as I tasted it. Now it has become a home-cooked dish for us, and it tastes great when we make it ourselves. Every time I grab it, I can’t get enough of it. The sourness of the lemon is not irritating, it is very refreshing and spicy, and it is really a good meal.
