Wash the chicken breasts, slice the ginger, and cut the green onions into sections.

Add cold water to the pot, add chicken breast, green onions, ginger, star anise and bay leaves, pour in cooking wine, bring to a boil, reduce heat to medium and simmer until the chicken breast is pierced with chopsticks.

Remove the chicken breasts, rinse them with cold water, let cool and tear into thin shreds.

Wash and peel cucumbers and carrots and cut into shreds.

Crush the garlic cloves and put them into a bowl and pound them into minced garlic. Wash and chop the coriander and green onions.

Add sesame paste, light soy sauce, oyster sauce, vinegar, pepper oil, and sesame oil and stir evenly.

Place cucumber and carrot shreds on top of the chicken shreds and pour in the sauce.

Stir well and serve.
