Braised Duck
Overview
Duck meat has high nutritional value and is an excellent tonic food. Its protein content is much higher than that of livestock meat. It is very healthy to eat more duck meat instead of other meat dishes in daily life.

Wash the duck meat and cut it into pieces, put it in a pot with cold water and scald it to remove the blood.

Cut the ginger into cubes, shred the pepper, and cut the garlic into cloves.

Heat oil in a pan and stir-fry duck.

Stir out the duck fat and strain out the excess oil.

Add ginger, onion, garlic and stir-fry.

Add fermented bean curd, oyster sauce, braised soy sauce, chili sauce, cooking wine and stir-fry until flavourful.

Add appropriate amount of water and simmer over low heat for about 20 minutes.

Add red pepper and stir-fry for a while, add salt, sugar and chicken essence and stir-fry evenly.

Sprinkle with chopped green onion and serve.
