Clean the large yellow croaker and dry the surface moisture with kitchen paper.

Cut the northern tofu into cubes, blanch in boiling water for a while and take it out. Cut the green onion into sections, slice the ginger and garlic, and cut half the green pepper into small rings and set aside.

Heat oil in a pot and when it is 70% hot, add yellow croaker and fry.

After frying the yellow croaker until golden brown on both sides, place it in oil and add a few peppercorns, then add onions, ginger, garlic and dry red peppers and stir-fry.

After the onion, ginger and garlic are stir-fried until fragrant, add cooking wine, soy sauce and balsamic vinegar in a ratio of 2:1:2. Then add enough boiling water to cover the yellow croaker, then add a little salt and sugar, and stir-fry gently evenly. After the pot boils, add green pepper rings and blanched tofu, continue to boil over high heat, then turn to low heat and simmer.
