Overview

I haven’t eaten this dish for many years. Today, on a whim, I recalled how I made this dish ten years ago. However, my family loved the finished product. When I ate it myself, the taste was different from what it was ten years ago, and it was a little too juicy. Because bell peppers in the supermarket cost 17 yuan per pound, I thought it was expensive and didn’t buy them. I used cherry tomatoes and green peppers instead.

  3. Soak the pineapple in salt water. I used half of it and kept the other half for fruit after cooking.

  4. Add light soy sauce, dark soy sauce, pepper, salt, and red wine to the cut meat, stir well, and marinate in the refrigerator for 10 minutes. Don't wait too long, it will be too salty.

  5. Add an egg to the marinated meat and massage it, then put it on the cornstarch plate and continue massaging the whole body until each piece of meat is evenly coated with cornstarch.

  6. Pour oil into the pot and heat it until the oil temperature is 50% to 60% hot. There is slight smoke on the oil surface. Flip the oil from all sides to the middle. When the raw materials are put into the pot, a large number of bubbles will appear around the raw materials without any popping sound. The pieces of meat have to be put into the pan one by one to shape them, and then taken out of the pan.

  7. Start frying the meat for the second time. Turn on high heat and heat the oil until it is 80% hot. At this time, there will be a lot of green smoke rising, the oil surface will be relatively calm, and there will be a sound when stirring with a spoon. When the meat is put into the pot, there will be a lot of bubbles and a slight explosion sound. When the oil is at this temperature it will be golden brown. It will make the meat crispy.

In addition, pour oil into the pot, add ginger slices, saute garlic until fragrant, add green peppers, stir-fry cherry tomatoes until the green pepper skin changes color, cherry tomatoes break the skin and juice comes out. Pour in the fried meat pieces and stir-fry the pineapple quickly. Don't fry pineapple for too long, or it will become sour. Finally, pour in the sweet and sour sauce and water starch prepared before, reduce the juice and put it in the pot.
