Sunflower Pot Stickers
Overview
I made two kinds of fillings, the sweet one was sweet potato + mozzarella cheese, and the salty one was minced pork with pickled mustard. Aunt Thirteen liked it.

Prepare the ingredients, take the minced meat out of the refrigerator, and defrost the mozzarella cheese in advance.

Wash and peel the sweet potatoes, slice and steam until soft and cooked, about 30 minutes.

Let cool slightly, add mozzarella cheese and mash with a fork.

Add appropriate amount of water and starch to the minced meat and mix well, marinate for more than ten minutes, add oil in the pot, add minced ginger and garlic and stir-fry until fragrant, then add the minced meat and stir-fry.

Stir-fry the minced meat until it turns white, add chopped mustard, add an appropriate amount of light soy sauce and oyster sauce, stir-fry evenly and then remove from the pot.

Brush the bottom dumpling skin with a layer of egg wash.

Add the sweet and salty fillings in turn, then cover with a piece of dumpling wrapper, press it together with a fork, then use a spatula to make a circle along the space between the forks, and knead it together with the head.

Brush with egg wash and sprinkle with a few cooked black sesame seeds.

When cutting with the spatula, be careful not to cut into the middle filling part.

Put the base oil in the pan, heat it to 50% heat, put it in and fry it. During the frying process, the heat will be medium-low (higher than low and lower than medium). After frying one side, fry the other side.
