  1. All ingredients are ready, shred the lean meat, chop the green onions, cut the dry red peppers, shred the green peppers, wash the mung bean sprouts and green vegetables and set aside.

  2. Bring a pot of water to a boil, add noodles and cook (do not overcook), cover with cold water and drain out the water.

  3. Add oil to the wok, when the oil is hot, pour in the lean meat, add dark soy sauce to add color, stir-fry evenly, and stir-fry until it is about eighty-cooked, then set aside.

  4. Add oil to the wok (remember to add more oil, otherwise the noodles will stick to the pan, and the fried oil will be less fragrant). When the oil is hot, add the chopped green onion and dried red pepper and sauté until fragrant. Then add the green pepper and mung bean sprouts and stir-fry until about seven times cooked. Add the fried lean meat and stir-fry evenly. Then add the green vegetables. After the greens are stir-fried, add a little salt, seasonings and thirteen spices, then add the noodles, pour in dark soy sauce, stir-fry evenly, adjust the salt, and add chicken essence.
