Pork Ribs and Bean Stew
Overview
Just like people in the South love making soup, people in the Northeast love stews. In winter, all kinds of stews are even more common. In my family, I stew a pot every three days, and it is served hot to the table.

Soak the purchased pork ribs in the bleeding water in cold water, change the water once or twice, and then remove the pork ribs to remove the moisture.

Add an appropriate amount of water to the pot, add an appropriate amount of cooking wine to remove the fishy smell, blanch the ribs in cold water and remove them for later use.

Peel, wash and cut the onions into sections, wash and shred the ginger, add an appropriate amount of oil to the wok, sauté the peppercorns, star anise, onions and ginger until fragrant, add the blanched ribs and stir-fry, add an appropriate amount of dark soy sauce and stir-fry.

Add an appropriate amount of water and rock sugar, you can add a little more water, bring to a boil over high heat, and stew the ribs over low heat for about 1 hour until the ribs are cooked.

Soak the beans in light salt water for 10 minutes, wash them repeatedly and cut them into sections.

When the ribs are basically cooked, add the beans and continue to simmer for about 5 minutes.

Add salt and light soy sauce to taste, take it out of the pan and serve it on a plate, and serve it with white rice. It's not a big deal to eat more than one bowl.
