Mix the main dough ingredients except butter and start the kneading function of the bread machine for 20 minutes;

When it has fermented to 2 times in size, continue kneading the dough for 5 minutes to deflate the dough (if you knead the dough by hand, knead the dough directly by hand to deflate the air) and then divide it into 10 parts. Place the baking sheet in the oven for secondary fermentation. Put a bowl of hot water in the oven and let it rise to 2 times in size (I deleted the picture of the freshly kneaded dough by mistake, but the picture is already posted)

During the second time, you can prepare the pineapple skin: soften the butter, add sugar and stir until smooth and puffy;

Add the egg yolk liquid in 3 batches and stir to combine;

Mix well (can be done by hand), do not knead excessively to avoid tendons;

Divide the pineapple skin into 10 parts, cover it with plastic wrap, and flatten one part so that the edges are thinner;

Use the back of a knife to lightly press out the pineapple shape;

Wear disposable gloves (or plastic bags) on your hands, move the pineapple skin together with the plastic wrap to the disposable gloves, cover the pineapple dough, cover the exposed parts, and press the edges gently;
